I would recommend using Shine... JUST KIDDING!
Is his entire head gray? You may be able to use AE 6's Vector Paint to rotoscope some color back into a few strands here and there.
But to utterly (and believably) change an entire head of hair for 30 seconds is a big undertaking. You'll need to make a mask around his hair and overlay a color layer on top (try using a combinaton of overlay, vivid light, or linear light).
