You can create a starfield in Photoshop by tinkering with noise and either curves or levels. You can do the Star Wars warp effect by zooming through it with extreme motion blur and/or radial blur. Duplicating this layer one or more times can greatly enhance the effect, plus it's fun to alter the timeing of the layers for an even different effect.
