I use Flaming Pear's Glitterato Photoshop plug-in to create still-image starfields and then various radial blurs and lensing effects to create a zoomin'-through-space effect.
It has been quite cool at times, especially when I combine it with layers of translucent nebular mist sliding around and such. Not quite up to Star Trek Voyager standard, but still pretty good for a doof such as I.
